Well, it depends on what you watch. Anime is a weird medium in the sense that unlike say videogames or film, a lot of its visual quality has nothing to do with budget. For example, "the big three" Naruto, One Piece and Bleach, all have horribly inconsistent to downright disgusting animation, save for the fight scenes that you have to sit through ten episodes of filler to get through. Dragon Ball Super, same thing. Those shows rake in insane amounts of cash though, yet small studios like Ufotable with their Fate series absolutely destroy basically every Toei show in existence with regards to animation, directing, cuts, music, fight choreography and basically everything you can think of. Before you knock anime, you need to watch a Bones show (Full Metal Alchemist Brotherhood, Darker than Black, Space Dandy, Noragami, Soul Eater and many more those guys are good) Also check out again, anything by Ufotable, Trigger, Production IG, 70% of MadHouse's stuff is great, just don't watch Toei shows because they are lazy as hell do to them owning all the most popular stuff.

Attack on Titan imo is one of the few recent mainstream shows that's actually good but there is so much better stuff out there.
